Anti-Ageing Salad for around £2 per portion
One of the greatest obstacles that prevents people from eating well is the high cost of some health foods. And, yes, shopping organic from funky health food shops can be expensive.
But it doesn’t have to be this way. We can shop cautiously and make wise combinations of simple foods. Take this anti-ageing salad which I have replicated from a recent visit to the wonderful Flax and Kale restaurant in Barcelona.
High in anti-oxidants this salad combo is rich in healthy nutrients as well as flavour. The sweetness of the papaya contrasts brilliantly with the sharp beetroot tang and all is unified by the wonderful creaminess of the yogurt dressing.

Waitrose provides all here. Of course, you could make your own quinoa salad however the second obstacle I come across when talking healthy food with clients is that of 'time'.
So not only does this dish come in at around £2 per portion, it is also extremely time-wise to put together. Especially if your sweet potato disks are left over from the previous evening.
You need –
1 Waitrose Love Life Calorie Controlled feta & lemon quinoa salad (use 1/3 of this)
1/3 large sweet potato cut into disks and roasted
1 ready cooked beetroot
A sprinkle of rocket
1/8 large ripe papaya cut into chunks
A few hazelnuts scattered over the dish for good fats, crunch and decoration
Black pepper
For the dressing I blended half of the Waitrose dressing which comes with the quinoa salad with 1 tablespoon of plain Greek yogurt.
This is a hugely satiating dish for either lunch or dinner and would work well alongside a piece of fish or chicken for those with meatier tastes.

Gorgeous food can be so easy on the pocket and thrown together for home eating or to take to work. We’d pay more for a take out coffee and twice this for a decent ready-made sandwich and certainly would be missing out on the anti-ageing properties!
