Are you bored of over-night oats? Or need a dessert because you’ve run out of yogurts and the usual stuff. Here is a sweet and delightful dish which works well for breakfast or as a pudding. In these self-isolating times, tins of prunes with their post war out-dated image are not flying off the shelves so you should have no problems in locating some. Their highly palatable sweet stickiness blends perfectly with frozen blueberries, tender banana and oats.
The walnuts offer some brain boosting nutrients and a level of satisfying fat which keeps us fuller for longer.
An additional benefit; it acts as a brilliant vehicle for powdered supplements: I hid my bone booster powder in here with no hint of its flavour plus a healthy spoonful of hemp powder to nourish the little vegetarians who also dwell full-time in my house at the moment giving me a chance to enhance their nutrition.
During anxious times as these for some, bowels may seize and refuse to function as they normally do, prunes of course can really help things along and restore some level of bowel routine, at a time when other routine has disintegrated.
Give it a go: truly delicious.
Ingredients (per portion)
· 40g oats (substitute 10g with ground flaxseed if you have it them)
· 5 tinned prunes (stones removed)
· 6 large frozen blueberries and/or half a frozen banana
· 3 walnuts (or other nuts)
· 1 tablespoon of hemp powder
· 2 tablespoons of prune juice (from the tin)
Blitz these up in a small blender or Nutri-Bullet.
Top with cream or yogurt and extra berries. Serve immediately whilst still cold.
Why use hemp?
This is a great vegan source of protein with all the essential amino acids. It is also high in magnesium, iron and fibre plus it is a source of omega 3. So here we have some of the key nutrients often lacking in a vegan or vegetarian diet all wrapped up in one product.
