We learnt during my lecture at the weekend that the humble coriander plant can be considered a ‘superfood’ alongside all the more fashionable options such as Goji berries and cacao.
Coriander is a credible source of dietary fibre, manganese, iron and magnesium as well. In addition, coriander leaves are rich in Vitamin C, Vitamin K and protein. It is often used in herbal blends as an anti-parasitic and for heavy metal detoxification.
The beauty of using herbs rather than the sweeter superfood options is that you are avoiding the natural sugar content of products such as berries or the stimulant properties of cacao. So perfect if you are attempting to stabilise blood sugar.
To pack a real coriander punch I’ve created this super food pesto which requires plenty of this nourishing herb plus a selection of some other super food items – olive oil, garlic and chilli.
Ingredients
2 cups fresh coriander leaves
1 garlic clove
pinch of Himalayan sea salt
1/2 cup extra virgin olive oil
1/4 cup walnuts
Pinch of chilli flakes
Squeeze of lemon
Blend until smooth in your mini chopper adding more oil if required. Great with crudities or served on toast with grilled halloumi.
